mix butter, brown sugar and cinnamon. Whisk the filling ingredients
together and then pour it into a sandwich-sized zip baggie. Zip up the
baggie and lay it on the counter while you prepare the pancake batter.</span></div>

<span style="font-size: x-small;">2. <b>Prepare the Icing:</b> In a medium microwave-safe
bowl, heat butter and cream cheese 30 to 60 seconds, just until butter
has melted and cream cheese has softened. Whisk in powdered sugar and
vanilla and combine until smooth. Set the icing aside.</span></div>

baggie again and give it a good stir to re-incorporate any butter that
may have separated. You want the mixture to thicken a bit- it's best
when it's similar to the squeezing texture of toothpaste (which will
eventually happen if you leave it on the counter long enough, but
refrigerate for a few minutes if you need to). Don't try to use the
filling for the pancake swirl unless it has thickened as it will be too
runny! Snip off a small piece of the corner of the baggie. </span></div>

<span style="font-size: x-small;">4. <b>Cook the pancakes:</b> Preheat a large skillet or
griddle to medium, and spray it with nonstick spray. Pour the pancake batter into pan (as you usually do). Pick up your cinnamon filling baggie and
squeeze the filling into the corner. Starting at the center of the
pancake squeeze the cinnamon filling on top of the pancake batter in a
swirl (just as you see in a cinnamon roll). Cook the pancakes 3 to 4
minutes, or until bubbles begin popping on top of the pancake and it is
golden brown on the bottom. Flip and cook an additional 2 to 3
minutes, until the other side is golden as well. When you flip the
pancake onto a plate, you will see that the cinnamon filling has created
a crater-swirl of cinnamon. Wipe out the pan with a paper towel, and
repeat with the remaining pancake batter and cinnamon filling. Serve
pancakes topped with a drizzle of cream cheese icing.</span></div>

To start out: Scald 1 1/2 cups of milk, 3/4 cup sugar and 1/2 cup of butter, in a microwave safe bowl, for about 2 minutes. Cutting the butter into pieces helps it melt faster. There will probably be some little cubes of butter still floating in the hot mixture, they will melt.<br />
We are going to add yeast to this hot mixture, but it will be too hot to just dump the yeast straight in (it would kill it!). To cool it down stir in 1-2 cups of flour, then add 1 egg and 1 Tablespoon of salt, and leave it to cool for a couple of minutes. Meanwhile, in a measuring cup dissolve 2 Tablespoons of yeast in 2 cups of warm water and 1 Tablespoon of sugar. Let it sit for a couple of minutes until it is bubbly. <br />
<div style="text-align: center;">**Keep track of how much flour you are adding!!!</div><div style="text-align: center;">Using a fork or wooden spoon, gradually stir in 9-10 cups of flour <em>(counting the flour you have already added to cool it earlier)</em>. I would recommend only adding 2 cups at time and stirring in between. These rolls turn out so much better when they are mixed by hand.</div><div style="text-align: center;">At the end the dough will be dense and sticky, and may be hard to stir, you can use your hands to incorporate the rest of the flour if needed. Be sure not to add too much flour. Then smooth the dough out and cover the bowl with plastic wrap. Leave it in a warm place and let it raise.</div><div style="text-align: center;"> </div><div style="text-align: center;">When your dough is close to raising completely, butter 2 cookie sheets and set them aside.</div><div style="text-align: center;">Cover your working space with flour to prevent the dough from sticking.
