pumpkin chocolate chip cookies

1 cup pumpkin
1 cup sugar
1/2 cup vegetable oil
1 egg
2 1/2 cups flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
1 tsp milk
2 tsp vanilla
chocolate chips
walnuts (if you like)

Mix pumpkin, sugar, oil and egg.  Add dry ingredients.  Mix milk and baking soda together, then add to mixture.  Add chocolate chips and vanilla.  Bake at 180 for 10 minutes.  Best warm or from the fridge.

Cinnamon Syrup

Cinnamon Syrup
1/2 C white sugar
1/2 C brown sugar
2 Tab flour
1/2 tsp cinnamon
1 tsp vanilla
1 C water

Mix everything together and boil for 5 minutes or until thickness desired.  Remove from heat.  Let sit for 10 minutes.  Enjoy. 

Hummus

Hummus
1 can chickpeas - drained
3 garlic cloves
1/4 tsp salt
2-3 Tab olive oil
1 serrano pepper -take out seeds
1/2 tsp cumin
1 large lemon juiced

Mix everything in the magic bullet.  Let sit in fridge for an hour.  Enjoy.

Brownies

Brownies

1/2 cup vegetable oil or melted butter
1 cup white sugar
1 tsp vanilla extract
2 eggs
1/2 cup flour
1/3 cup unsweetened cocoa powder
1/4 tsp baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan.
In a medium bowl, mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended. Stir in walnuts. Spread the batter evenly into the prepared pan.
Bake for 20 to 25 minutes, or until the brownie begins to pull away from edges of pan. Let cool on a wire rack before cutting into squares.

Enchilada Sauce

Enchilada Sauce
1 box Quero Polpa 520grams
3 Tab chili powder
1/2 onion
1/2 tsp cumin
4 Tab flour
2 chicken bullion cubes
3 cloves garlic
Mix everything in magic bullet.  Add water to thin.  Warm up and serve. 

Pancakes

Pancakes
1 1/2 C flour
1 tsp salt
1 1/4 tsp baking powder
2 eggs
3 Tab butter
3 Tab sugar
1 C milk
Mix everything together and let sit for 2 minutes.  Cook on warm griddle.  Enjoy.
